Fast and Easy Homemade Egg Bites

This fast and easy recipe allows you to make egg bites at home for a fraction of the cost of buying them. With minimal prep time, you can make large batches of delicious homemade egg bites. Never skip breakfast again with this yummy "on the go" meal.

Ingredients
  

  • 12 Large Eggs
  • 2 cups Cheddar Cheese (I also mix parmesan in)
  • ½ cup milk
  • Salt to taste
  • Pepper to taste
  • ¼ tsp Basil and/or Oregano optional
  • ½ cup Additional items: veg (spinach, peppers, onions or anything you like) or bacon, ham, more cheese. optional

Equipment

  • 1 Mixing Bowl
  • 1 Muffin Tin (12 cups)
  • 12 Silicon Muffin Cups

Method
 

  1. Preheat oven to 350℉.
  2. Line muffin tin with silicon liners. Paper liners will work as well but are not as easy to take off. I recommend spraying the liners with some olive oil if you have any.
  3. Combine all ingredients into a bowl and pour evenly into 12 muffin tin spots.
  4. Bake at 350℉ for 20-25 minutes. Be sure that all the tops are golden brown and the egg is cooked through.
  5. Allow to cool for 10 minutes before removing from the pan.

Notes

To store egg bites:
  • Once cooled, store in an airtight container in the fridge for up to 5 days.
  • You can freeze these for up to 5 months. Just take the bites you want to eat out of the freezer and into the fridge the night before you want to eat them.
