Sourdough Oatmeal Breakfast Cookies

Ingredients
  

  • 2 cups old fashioned oats
  • 2 ripe bananas
  • 2 large eggs
  • 2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 4 TBSP ground flaxseed
  • 1/4 cup apple sauce
  • 1/2 cup sourdough starter/discard fed or unfed
  • 1/3 cup maple syrup
  • 1/2 cup peanut butter
  • 1/2 cup chocolate chip and/or raisins optional

Equipment

  • 1 Stand Mixer or Mixing Bowl
  • 1 Cookie Sheet
  • 1 Parchment paper
  • 1 Cooling racks

Method
 

  1. Preheat oven to 350℉.
  2. Mix all ingredients together. I find it easier to mix the wet ingredients in the stand mixer first and then add the dry ingredients in second.
  3. Mix until well combined.
  4. Place parchment paper onto a cookie sheet. scoop out 1/3 cup of dough and place on the cookie sheet.
  5. Slightly flatten and shape the cookie to be about 1/4-1/2 inch high. These will not spread when baking.
  6. Bake for 15 minutes. Allow to cool on the pan until almost fully cooled. Then transfer to a cooking rack to ensure they are completely cooled.
