Sourdough French Toast Casserole

Why I love sourdough French toast casserole?

  1. As a sourdough bread baker I end up with a LOT of extra bread some weeks. Don’t get me wrong, it is wonderful to have so much bread! But, there are some weeks that my family of three just doesn’t get through it all. This is a recipe that I make to use up some of that bread quickly. It helps us to be less wasteful and still enjoy all the benefits of the sourdough bread that I have made.
  2. This is a recipe that can be made the night before and just thrown in the oven the next morning to enjoy. I love breakfast recipes that allow me to sit back and enjoy my coffee while it bakes in the oven. The less I have to do when I am blurry eyed in the morning, the better!
  3. This dish looks so impressive! I usually have this ready to make when we have guest stay overnight. It is always a hit because it tastes so good. But, it also looks very fancy and special for my guests. It also makes a great Christmas morning breakfast.
  4. It is kid friendly. I have yet to find a child who won’t eat this delicious meal. I will admit that there is a good amount of sweet additions to this breakfast but it is a nice way to get some sourdough bread into your kids if they don’t normally like the “sour” taste.

Time needed: 1 hour and 55 minutes

Step-by-step instructions:

  1. Cut 2 inch cubes of sourdough bread.

    I like to cut up my sourdough bread like this once it starts to get a little hard and stale and then freeze it. I always have these handy to quickly throw together a sourdough French toast casserole.

  2. Chop or grate your butter.

    You want lots o little butter chunks all throughout this dish for a really nice taste.

  3. Mix together ingredients (excluding the bread and powdered sugar topping).

    Mix eggs, milk, cream, butter, brown sugar, vanilla, cinnamon, nutmeg and sourdough discard (optional). I like to use my stand mixer for this.

  4. Place the bread into a 9×9 baking dish and pour the wet ingredients over top.

    Make sure as much of the bread is covered by the mixture as possible. Push down some of the bread to fully incorporate everything together.

  5. Cover with plastic wrap and place in your fridge for 1 hour – 24 hours.

    You want to let the mixture sit for at least an hour for the best results. I like making this the night before I want to bake it.

  6. Remove plastic wrap and bake.

    Bake at 350 degrees F for 45-50 minutes. Be careful not to burn the top. If it is looking too dark, place some aluminum foil over the top for the last 10 mins or so.

  7. Add powdered sugar and brown sugar (optional) to the top of the casserole after it sits for 10 minutes.

    Allow to cool for 10 minutes before serving.

Can I use some sourdough discard in this recipe?

Yes! I often add 1/2 cup of sourdough discard to the wet mixture and it turns out great. It is a nice way to use up some of your discard. However, you don’t have to do this if you don’t have any handy.

Can I make this recipe with other bread?

Yes! I use sourdough for the health benefits and to use up some of our leftover sourdough bread that we make each week. This recipe will work with any kind of bread though.

This Sourdough French Toast Casserole recipe is a very easy breakfast to make for your family or guests. The best part is that you can prepare it the night before and bake it the next day. Easy, simple, and delicious!

Ingredients
  

  • 1/2 Loaf Bread (sourdough)
  • 1 1/2 cups Milk
  • 1/4 cup Heavy Cream
  • 1/2 cup Sourdough Discard optional
  • 1/2 cup Butter unsalted
  • 5 large Eggs
  • 1/2 cup Brown sugar
  • 1 tsp Vanilla extract
  • 1 TBSP Cinnamon
  • 1/8 tsp Nutmeg
Topping
  • 1/4 cup Powdered Sugar
  • 1/4 cup Brown Sugar optional

Equipment

  • 1 Stand Mixer
  • 1 9×9 baking dish

Method
 

  1. Cut your bread into 2 inch cubes.
  2. Grate or chop cold butter.
  3. Add butter, eggs, vanilla, brown sugar, cinnamon, nutmeg, milk, cream, and sourdough discard (optional) to a mixing bowl. Mix well but allow the butter to stay chunky if possible.
  4. Place bread into a 9×9 baking dish. Pour wet mixture over top of the bread. Make sure to cover as much bread as possible.
  5. Cover with plastic wrap or a lid and put into the fridge for 1 hour -24 hours.
  6. When ready to bake, preheat the oven to 350 ℉ and take the dish out of the fridge.
  7. Bake for 45-50 minutes. Be careful not to burn the top. Cover with aluminum foil if it is looking too dark.
  8. Allow to cool for 10 minutes before serving.
  9. Sprinkle to top with powdered sugar (and more brown sugar if you want).
  10. Enjoy with maple syrup, berries, whipped cream or whatever else you can think up to add to this delicious breakfast feast!

Final thoughts about sourdough French toast casserole

  • Eat this breakfast within 3 days of baking it.
  • You can freeze it once it has been baked for up to 4 months. Fully thaw the casserole and then bake at 350 degrees F for 30 minutes to reheat it.
  • Add berries, apples, oranges, whipped cream, maple syrup and anything else you can think of to make this recipe even better!
  • I like to make this for Christmas, birthdays, and guests as a special breakfast treat.
