Fast and Easy Homemade Egg Bites Ready For a Busy Morning

I am sure that I am not the only one who struggles to get a nutritious meal into my family on busy mornings. So I am very excited to introduce you to the fastest, tastiest, and easiest homemade egg bites you will ever make. These egg bites are nutritious and delicious. They are also very customizable so everyone in your house will be happy to eat these on a busy morning.

These are really yummy when you make them fresh. But, the best part about these egg bites is that you can make them ahead of time and reheat them for the perfect “on the go” breakfast.

This homemade breakfast is easy because you likely already have all the ingredients in your kitchen.

There are a few reasons why these egg bites have become a staple in our household.

The first reason being that the ingredients are always in the house. I can make them very last minute or quickly on a Sunday evening to prepare for the week ahead.

Second, the process is fool proof! This recipe is so easy and quick. You can honestly throw everything into the bowl all at once, mix, pour and bake. Done!

Lastly, this recipe can be customized in so many different ways. Here are a few of my favorite combinations:

  • Spinach and Feta
  • Salsa
  • Bacon and Cheese
  • Ham and Cheese
  • Peppers and Onions
  • Try different herbs and spices. Ex. Oregano, Italian, Basil, Parsley

Ingredients

Eggs

12 Large Eggs works best. Think of it as basically one egg per muffin tin. There for if you were to double this recipe, you would use 24 eggs and fill 24 muffin tins.

Cheese

I like using Cheddar but you can use any combination of cheese that you would like. You can also omit the cheese if you want. I say 2 cups of cheese so that the muffin tins don’t overflow too much. However, if you love cheese, go ahead and add as much as you want!

Milk

Any milk will work. Adding milk keeps the egg bites moist.

Salt, Pepper and Additional Seasoning (optional)

Do these to taste. I enjoy trying new herbs and spices to see what new flavored egg bites I can come up with.

Step-By-Step Instructions

1. Preheat the oven to 350 degrees Fahrenheit. Mix all the ingredients together and spray the muffin tins with olive oil (optional).
2. Pour evenly into each muffin liner for best results.
3. Place in oven for 20-25 minutes.
4. Remove from oven and allow to cool for 10 minutes. Be sure they are cooked through and golden brown on top.
5. After 10 minutes, remove from the muffin liners and enjoy! Note how easy they come out of the silicon liners.
6. Serve with any sauce you like or some added fresh veggies for a delicious breakfast. Or, if you are in a rush, throw these into a container and eat them on the go!

Final Thoughts and Tips

  • Once you have baked these egg bites you can keep them in an air tight container for 5 days.
  • You can freeze them for 5 months. Just put them in the fridge to thaw the night before you want eat them.
  • These are great for guests as well. Fast and easy to make but they look quite cute and unique on the plate.
  • For a fun morning with your kids, have them choose the ingredients they want in their egg bites and they can add them in once the egg and milk mixture is in the muffin cups. They always eat better if they have helped to make a meal and even more so when they feel they got to choose what goes into it.

Equipment

  • 1 Mixing Bowl
  • 1 Muffin Tin (12 cups)
  • 12 Silicon Muffin Cups

Ingredients
  

  • 12 Large Eggs
  • 2 cups Cheddar Cheese (I also mix parmesan in)
  • ½ cup milk
  • Salt to taste
  • Pepper to taste
  • ¼ tsp Basil and/or Oregano optional
  • ½ cup Additional items: veg (spinach, peppers, onions or anything you like) or bacon, ham, more cheese. optional

Instructions
 

  • Preheat oven to 350℉.
  • Line muffin tin with silicon liners. Paper liners will work as well but are not as easy to take off. I recommend spraying the liners with some olive oil if you have any.
  • Combine all ingredients into a bowl and pour evenly into 12 muffin tin spots.
  • Bake at 350℉ for 20-25 minutes. Be sure that all the tops are golden brown and the egg is cooked through.
  • Allow to cool for 10 minutes before removing from the pan.

Notes

To store egg bites:
  • Once cooled, store in an airtight container in the fridge for up to 5 days.
  • You can freeze these for up to 5 months. Just take the bites you want to eat out of the freezer and into the fridge the night before you want to eat them.
