This easy and flaky homemade sourdough pie crust is so delicious. You will never buy store bought pie crust again!

For some reason homemade pie crust seemed so intimidating to me. I am sure I am not the only one who feels this way about making homemade pies from scratch.
But, I am here to tell you that once you try this recipe you will never fear making pies or pie crusts again!

How to roll pie crust dough
Remove the disk from the fridge and rest it on the counter at room temperature for 5 to 10 minutes. This will make the dough easier to roll out.
Place the dough on a floured work surface. Roll the dough into a circle with a 1/8 inch thickness.
It’s best to start rolling the dough from the center. Roll outwards. Turn the pie crust approximately 90° on the work surface after each roll.

How long to chill pie crust dough?
- You can keep this homemade sourdough pie crust dough in an air tight container for 2 hours – 4 days in the fridge. The benefit of letting this sit in your fridge for longer than 2 hours is that you will benefit from the long fermentation.
- You can freeze it for 6 months. Just remember the pie crust needs to be cold when you are working with it so I like to thaw it in the fridge for 24 hours.

Flaky Homemade Sourdough Pie Crust
This pie crust is so flaky, buttery and delicious. This recipe will allow you how to make from scratch, homemade sourdough pie crust that is so easy and yummy!

Ingredients
- 250g all purpose flour
- 226g cold butter (cubed or grated if frozen)
- 1/2 tsp sea salt
- 1 tsp granulated sugar
- 2 tsp white vinegar
- 1 cup (250g) of cold sourdough starter

- Use a cheese grater to grate frozen butter into a large mixing bowl. Or cube up cold butter from the fridge. Add the flour, salt and sugar and use a fork to toss the ingredients together, making sure the butter is coated and separated. Use a bench scraper or a pastry cutter to cut the butter into the flour mixture, until it forms large crumbles.
- Add the sourdough discard and vinegar to your stand mixer bowl and then mix for only about 20 seconds or just to incorporate them into the mixture. DO NOT OVER MIX. Switch to your hands and press the dough together until there are no dry bits left in the bowl.
- Form the dough into a disk shape and wrap in plastic wrap. Chill for at least 2 hours or up to 4 days.
- Proceed with your pie recipe directions.
