These easy and cute homemade mini apple pies are absolutely delicious. Try this recipe to put a fun twist on a classic apple pie.

If you’ve read my easy sourdough pie crust post, you’ll know that making pies seemed extremely intimidating to me. I avoided trying to make pies for the longest time because I thought it was time consuming and difficult. I was afraid that I would fail at it over and over again so I didn’t even want to try.
Then, after two years of making sourdough recipes, I decided to give it a try. And am I ever happy that I did! I am here to tell you not to be afraid. Pies are so easy and turn out so great more often than not.
Pies are also really fun and rewarding to make because you can do so many different things with them. Savory, sweet, mini, pop tart…the options are endless.
Eventually I developed a pie crust recipe that I really like which you can find here.
Now I would like to share with you a really cute and different type of pie. A mini apple pie in a muffin tin. This recipe takes a classic pie and makes it a little more fun because everyone gets their own individual mini apple pie to enjoy.
This recipe is great for all kinds of events! Thanksgiving, housewarming gift, Christmas dessert, Christmas dessert exchange, and so much more.
The first step to making a mini apple pie
First, you need to prepare you dough. Follow any recipe for pie dough that you like. Just make enough for the amount of mini apple pies you want to serve. For example, if you want 9 pies then make 1 normal pie crust amount. If you want 18 mini apple pies then make enough dough for 2 normal pie crusts.

After following your favorite pie crust recipe, allow the dough to chill for at least 2 hours. Then, put it on the counter at room temperature for 10 minutes. This ensures it is soft enough to roll out but still quite cold.

Apples
I use 7 large Gala apples for these mini apple pies but you can use pretty much any kind of apple.

- Honeycrisp

- Granny Smith
- Gala
- Fuji
Best way to prepare apples
You can do the peeling, slicing and coring by hand. However, I am not a glutton for punishment so my favorite method is using a multipurpose apple peeler, corer and slicer. Yes, you read that right. There is a tool out there that does it all and it is worth every penny (in my opinion). Mine is a hand cranked one but you can also get electric ones if you really want to be hands off.

Granulated Sugar
Any kind will do. Organic options are nice as well.
Brown Sugar
Be sure to pack the brown sugar well when measuring.
All Purpose Flour
Do not use whole wheat for this recipe. The texture of the filling does not turn out as nice as when you use all-purpose flour.
Cinnamon, Nutmeg and Allspice
Don’t overdo the nutmeg and allspice but go ahead and add extra cinnamon if you really like it.
Lemon Juice
Egg
Coarse sugar for topping
I also use normal granulated sugar when I don’t have anything more coarse. So just use what you have!

Mini Apple Pies Made in Muffin Tins
These little pies are so cute and taste amazing! Mini apple pies are a fun twist on a classic pie recipe that you will make over and over again.
Yield: 18 mini apple pies
*Use your favorite pie crust recipe for these. I suggest trying my sourdough pie crust recipe. Alternatively, you can use store bought pie crust.

Ingredients
- 2 TBSP all purpose flour
- 7 large apples
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp allspice
- 1 TBSP lemon juice
- 1 Large Egg
- coarse sugar for sprinkling on top
Directions
- Make your favorite pie crust recipe.
- Preheat the oven to 425°F.
- Roll out the dough until it is 1/4-inch thick. Using a 4-inch cookie cutter (or a wide mouth glass jar), cut out as many circles as you can. Re-roll the dough and cut out additional circles until you have a as many as you need (up to 18 for the amount of filling in this recipe)
- Arrange each circle in a muffin tin cup, pressing it down and up the edges.
- In a large bowl, stir together the sliced apples, lemon juice, white sugar, brown sugar, spices and flour.
- Divide the mixture among the muffin tins. Add the top crust and pinch together with the bottom crust using a fork or your fingers. Cut small holes in the top with a knife.
- Brush the tops of the pies with the egg wash then sprinkle them with coarse sugar (optional).
- Bake the pies until they are golden brown, 16 to 18 minutes.
- Remove the pies from the oven and let them cool completely in the muffin tin.
- Using a knife, run it around the edges of each pie to help release them from the pan.
- Serve and enjoy! Add ice cream or whipped cream for a special treat.
