What is it about Magic Cookie Bars that warrants the word “magic” right in the title? It is the ooey gooey, crumbly, buttery, sweetness that you taste when you try one! The other thing that makes them “magic” is that they are honestly one of the easiest desserts to make that is out there.

Honestly, just look at that photo! Magic Cookie Bars look impressive, taste even better than they look, and they will only take you 40 minutes to make. What’s not to like?

This is an easy recipe to convert into a gluten free option. I’ve made these with 1 to 1 gluten free flours and with almond flour. I think the nut flours give these a wonderful taste. To successfully replace regular flour with a gluten free option simply switch them out and use the same measurement. Just keep in mind that most gluten free flours are more crumbly than regular all purpose flour. However, with this particular recipe that doesn’t really make much of a difference because the base is kind of like a shortbread which tends to be crumbly anyways.

I kind of gave the answer away with my introduction but the best part about this treat is the taste. If you are someone who likes shortbread type crusts then you will absolutely love this easy homemade recipe.

I like to have a bunch of easy dessert recipes handy that I can put together with ingredients I already have at home. This is one way that I can achieve a more simplified homemaking routine. Magic Cookie Bars

This treat is sure to impress anyone with its sweet and buttery taste and satisfying texture. The best part about Magic Cookie Bars is that they are super easy to make and very customizable.

Equipment

  • 1 9×9 baking dish
  • 1 sheet of parchment paper

Ingredients
  

  • ½ cup melted and cooled butter
  • cup all purpose flour
  • 1 cup coconut shreds
  • ½ cup ground flax seed
  • ½ cup crushed pecans
  • ½ cup white chocolate chips
  • ½ cup dark or milk chocolate chips I prefer dark
  • 1 12 oz can of sweetened condensed milk

Instructions
 

  • Preheat oven to 350℉. Line a 9×9 baking pan with parchment paper.
  • Pour melted butter (once cooled) into the bottom of the dish on top of the parchment paper.
  • Sprinkle to flour on top of the butter. No need to mix. Gently press down on top of the flour to pack it down. Be sure to get the corners well.
  • Add coconut shreds, then add the ground flax seeds and pecans. Pack them down lightly again.
  • Add chocolate chips for the next layer. I like to keep a few chocolate chips out to sprinkle on top after the magic cookie bars have baked (this is optional)
  • Pour the whole can of sweetened condensed milk on top.
  • Bake for 30 minutes at 350℉. Allow to cool completely before cutting. Serve immediately or place in the fridge to eat in the future. These taste good cold as well as room temperature.

Notes

Store in an airtight container once they have cooled to room temperature. Eat these within 5 days of baking. You can freeze these for up to 4 months. To thaw, just put them on the counter for 40 minutes.
You can customize this recipe and add whatever layers of ingredients you want. Just be sure the make the crust the same and the condensed milk topping the same for the bars to have structural integrity.

I think these bars look pretty fancy. Anytime I bring out this wonderful treat, I hear “ohs” and “ahs” because it just looks so darn good!

I usually cut the squares and then dish them out of an airtight container onto a plate. You can also serve these on a fancy serving dish. These are a great treat to bring to potlucks or holiday gatherings!
