Why I Love These Cookies?

These cookies have become a yearly tradition for a few reasons which I will outline below.
- They are super easy to make! My son loves helping me with recipes like this one because it’s hard to mess up. It is best practice to use two bowls to separate the wet ingredients from the dry. But, the truth with this recipe is that you can throw it all into one bowl, mix, and bake if you wanted to. So overall, this is a very kid friendly recipe.
- These are nut free. Because we are using Hershey Eggies in this recipe; these cookies are technically nut free. Other brands of small chocolate eggs are processed in facilities that may contain peanut and tree nuts. Hershey Eggies are made in a factory which is certified peanut and tree nut free. So everyone can enjoy these delicious Easter cookies.
- Lastly, I really like this recipe because these Easter cookies with Hershey Eggies are really fast to put together. If I am in a really big rush, I can have them all done and on the cooling racks in under 25 minutes. I tend to throw these together quickly before we have friends come over so we can all enjoy some warm cookies with an Easter flare to them.

How to Avoid Spreading Between Easter Cookies with Hershey Eggies
The dreaded spread. This is a tough thing to master in the cookie world but here are a few tips to help prevent these cookies from spreading too far and wide on the cookie sheet.

- Try chilling the cookie dough before scooping it out and putting it on the tray. I definitely try my best to do this each time I make these cookies. If you can chill the dough for 30 minutes in the fridge they will spread less once they are in the oven. Sometimes I even get them all set up on the cookies sheets and then throw them in the fridge for a little bit. Either option works well if you are having trouble with these cookies spreading too much.
- Do not flatten these cookies. I recommend using a 2 TBSP cookie scoop when placing the dough balls onto the cookie sheet. This is make all your cookies even in size and shape. If you try to flatten these with a fork (as you might with peanut butter cookies) you will find that they get too flat and spread out.
- The last tip I have for you is to make sure that you space out your cookies enough on the cookie sheet. Be sure to only put 9-12 cookies on each cookie sheet. You want about 2 inches of space between each dough ball to avoid them all turning into one giant cookie.

Easter Cookies with Hershey Eggies
Equipment
- 1 Stand Mixer optional
- 1 Cookie Sheet
- 1 cookie scoop optional
- 1 Roll of Parchment Paper
- 1 wire cooling rack
Ingredients
Wet ingredients
- ⅔ cup butter
- ½ cup sugar
- ½ cup brown sugar packed
- 1 large egg
- 1 tsp vanilla
Dry ingredients
- 1½ cups all purpose flour
- 1 tsp baking powder
- ½ tsp salt
Chocolate
- ½ cup Hershey Eggies
- ½ cup Any chocolate chips of your choice
Instructions
- Preheat the oven to 375℉. Line your cookie sheets with parchment paper.
- Mix butter, sugar, brown sugar, egg, and vanilla in your stand mixer until creamed.

- In a separate bowl, mix the flour, baking powder and salt together.

- Combine the two together by slowly adding the dry ingredients into the wet ingredients in the stand mixer until a dough is formed.

- Fold in the Hershey Eggies and/or your choice of chocolate chips.

- Optional: At this point you can chill the dough for 30 minutes in you want. Either in the mixing bowl or after you scoop out the dough balls and place them on the cookie sheet.

- Using a 2 TBSP cookie scoop, scoop out 24 dough balls and place them spaced out 2 inches on the cookie sheets.

- Bake in the oven for 11 minutes.

- Allow to cool before eating. Wire cooling racks are recommended for this.

Notes
Ways to Improve These Easter Cookies with Hershey Eggies
- You can turn these into Easter Whoopie Pies by adding icing in the middle and creating a little Easter cookie sandwich.
- You can add any combination of chocolate chips you want with the Eggies. My personal favorite is adding some dark chocolate chunks. You can use white chocolate chips, peanut butter Eggies, caramel chips, milk chocolate chips.
- A fancy addition to these cookies would be to drizzle some icing over the cookies and let everything cool and harden.
- Add whipped cream on top of the cookies with some extra Eggie chocolates nestled in the cream.
- Eat with vanilla ice cream as a dessert.
