Why do I love this Easy No Bake Gluten Free Cheesecake Recipe?

It seems like more and more people are finding out that they are sensitive to gluten these days. In my family alone, my Mom, my brother, my sister, and my sister-in-law are all gluten intolerant!
I find it hard to come up with gluten free desserts that are yummy for both the gluten intolerant people and the gluten eaters alike. However, this recipe is one that keeps everyone happy. It is also 100% kid approved!
Another reason I love this recipe is that it is so easy to make. The ingredients are simple and the process is fast and easy. Just be sure to give yourself at least 5 hours for this easy no bake gluten free cheesecake to set in the fridge before you serve it.
I like to make this the night before I am going to serve it.

What are the ingredients in a Easy No Bake Gluten Free Cheesecake?
- Gluten free graham crackers. There are lots of brands that make pre-crushed gluten free cheesecake base. Another option is to buy a premade gluten free base if you want to make this recipe extra fast and easy. However, it is more cost effective to just buy or make gluten free graham crackers and crush them yourself. I prefer the latter option.
- Butter. Unsalted is preferred but, in all honesty, I have made this with salted butter and it was really yummy also.
- Cream Cheese. This is the magic ingredient for a cheesecake. Be sure you are using full fat cream cheese for the best results.
- Icing sugar.
- Whipping Cream. If you live in the UK you can use double cream instead which makes this recipe absolutely delicious. I live in Canada and have a really hard time finding double cream so whipping cream (33%) is the next best thing.
- Vanilla extract. For the best taste, use real vanilla extract instead of an imitation kind.
- Optional chocolate chips or Hershey Eggies. See below for more ideas!

Do I need special equipment for making this Easy No Bake Gluten Free Cheesecake?
The only item I would strongly suggest that you have for this recipe is a springform pan. I use either an 8 inch or a 9 inch pan when I make this easy no bake gluten free cheesecake.
I do suggest using a kitchen scale and a stand mixer to make your life easier. But, these are not needed to make this recipe successful. A hand mixer or even a good spoon will do the trick!
Can I Make this Easy No Bake Gluten Free Cheesecake with regular graham crackers?
Yes! On occasions where I know there are not any gluten intolerant people around, I will use normal graham cracker to make the base for the cheesecake. You can follow these instructions exactly as they are but just swap out the gluten free ingredients for gluten full ingredients.

- I used a box of pre-crushed gluten free crackers for this recipe but if you are using whole crackers you will need to crush them or put them in a food processor first.

- Melt and cool your butter. Mix butter and graham cracker crumbs together and press flat on the bottom of the 8 inch springform pan. Place in fridge for 30 minutes while you make the filling.

- In a stand mixer or bowl (with a hand mixer) mix together your cream cheese, icing sugar and vanilla extract.

- Add in the whipping cream and mix together with the whisking attchment for about 2 minutes. DO NOT OVERMIX or the cheesecake wont set as nicely in the fridge. Optional: Fold in any additional ingredients at this point (ex. chopped chocolate chips, strawberry jam or Hershey eggies).

- Place the filling on top of the chilled base and spread it flat in the pan.

- Chill in the fridge for 5 hours or overnight.

- Remove the spring form pan once the cheesecake has chilled for at least 5 hours. Top with any additional treats (ex. chocolate chips, nuts, Hershey eggies) you'd like right before serving.

- Make an Easter or spring no bake cheesecake by chopping up Hershey Eggies and putting some on top as well.
- Add chopped up chocolate chips and/or chocolate chunks.
- Add some Strawberry Jam. Be sure that it is a nice chunky jam for best results. Do not overmix this.
- Add chopped pecans inside the filling and then drizzle with caramel sauce on the top.
- Crumble up Oreo cookies inside and then decorate with whole Oreo cookies on the top.
