History of Pancakes

So I heard a little bit of history about pancakes the other day and I thought I would share it in this post because I don’t think many people know much about pancakes other than that they taste delicious. So, here we go…

Pancakes are old! Like really old. The first record of someone making a pancake was in 500 B.C.E. in ancient Greece. How crazy is that?

They are also known as “flapjacks” or “johnny cakes“.

Maple syrup became popular with pancakes in the 1880’s.

Probably the most famous pancake day of the year is Shrove Tuesday. Pancakes became a tradition on this day because it was the last chance to use up all y0ur rich foods before the start of Lent.

Why I Love Whole Wheat Sourdough Pancakes

Pancakes are such a great comfort food! In our house we make pancakes a lot. We make them for:

  • after school snack somedays
  • breakfasts before church on Sundays
  • for dinner on nights we want something quick and satisfying

I also like to make the batter beforehand and then pull it out a day or two later to make a quick snack or meal.

The best part about these pancakes is that they are filling and have added health benefits in comparison to regular pancakes.

Health Benefits of Whole Wheat Sourdough Pancakes

I have mentioned the benefits of baking with sourdough discard many times before but here is a quick recap:

  • promotes a feeling of fullness
  • adds healthy probiotics to your gut
  • allows for easier digestion of flour products

There are also benefits to eating whole wheat flour instead of white flour.

  • high in fiber which helps to regulate blood sugar
  • higher nutrition content than white flour

So overall, you can feel good about feeding your family these whole wheat sourdough pancakes anytime of the day!

Whole Wheat Sourdough Pancakes

Wholesome and delicious whole wheat sourdough pancakes. These pancakes are filing, yummy and will soon become a staple meal in your household!

Equipment

  • 1 Stand Mixer optional
  • 1 griddle or large frying pan

Ingredients
  

  • 1 cup sourdough discard
  • 1/4 cup sugar
  • 1 cup milk
  • 2 Large Eggs
  • cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp Salt
  • 1 tsp Vanilla Extract

Instructions
 

  • Heat up a griddle or large frying pan on low to medium heat with some butter or oil in the pan.

  • Mix together sourdough discard, milk, sugar, eggs and vanilla in a stand mixer or large bowl. Add the remaining dry ingredients and mix together until it creates a thick pancake batter.

  • Take ⅓ cup of batter at a time and place it on the griddle or pan.

  • Once you see bubbles forming on the top of the pancake, it is time to flip it over and brown the other side.

  • Remove and serve with maple syrup and butter. Add whipped cream and fruit as an added treat.

Notes

The batter can be made ahead of time and placed in the fridge until needed. I would not leave this for longer than 2 days in the fridge.
After cooking the pancakes, you can freeze them for up to 4 months in an air tight container. Leave them on the counter for 20 minutes to thaw when you are ready to eat them.

I love making pancakes because there are so many ways to make them more exciting! Here are a few ideas to make your pancakes even better.
