Why I Love This Recipe

This recipe is great because it is really fast to put together. you can get all the ingredients mixed and ready for the oven in about 10 minutes. This is one of those recipes that I keep handy for when I have a last minute gluten free guest coming over.
This recipe is also nice because of the size of the scone. They just mini! This is because they are quite sweet compared to other scones. They are the perfect size for a small sweet treat to go with your tea or coffee.
I also really like how these scones have a pink tint to them from the strawberries. You can also add freeze dried strawberry powder if you want them to be even more pink for a special occasion. The color is just so pretty and fun!
Benefits of Adding Strawberries to Your Baking

Strawberries are amazing! These little berries are super charged with nutrients and a vibrant flavor.
Strawberries add natural sweetness and moisture to your baking. This is particularly important when it comes to gluten free baking- which tends to be quite dry.
They are full of antioxidants and Vitamin C to combat oxidative stress on your system.
Strawberries also add fiber to your baking which is good for your heart and your gut!
List of Occasions to Make This Recipe For
- Girl Baby Showers. The pink hue to the scones is just perfect to match a little girl baby shower theme.
- Spring or Summer Bridal Shower. The light and sweet flavor of these scones is the perfect addition for your spread at a “fresh off the market” themed bridal shower.
- Bible Study or Book Club Snack. Because these aren’t very big, they make the perfect snack to go with some coffee while you are sitting in a more intimate setting such as a bible study or book club.
- After School Snack. Sometimes my Mom will pick my son up from school as a special Grandma afternoon and on these days I make special after school snacks. She is Celiac so I am always looking for ways to spoil her with my baking. It is a small way that I can say thank you for her taking the time to spend some special time with my son. These gluten free strawberry scones are a wonderful after school snack for Grandmas and kids alike!
- Easter or Valentine’s Day Breakfast. These are so yummy but are also packed full of nutritious strawberries. So, this recipe makes for a very special kind of breakfast on holidays where you want something pink or something fresh to eat.
