Why I Love Peanut Butter Marshmallow Bars

I love this recipe for 3 main reasons:
- It only requires 4 ingredients!
- It only take a few minutes to throw it all together.
- It is always a hit with anyone who tries these. The fun colors and decadent texture are the perfect combination for a fun treat.
I will note that if you do not like peanut butter, you will not like these. While they are sweet and butterscotch-y (not a word but let’s go with it); it is still very much a peanut butter treat.
Lastly, these are a gluten free dessert which is nice. Often times I need to whip up a quick gluten free dessert for friends and family in addition to the already planned dessert. These are so fast and easy that I often make them in these instances.
Help, I Can’t Find Colored Marshmallows!
Don’t panic! This is the exact situation I was in when I decided it was time to share this awesome recipe with the world. Here in Canada there has been a shortage of mini colored marshmallows. Oh, the horror!
If this happens to a store near you just substitute for regular mini marshmallows. I did end up finding large colored marshmallows so I cut them up into smaller sections to replace the mini colored marshmallows and it turned out great. I might do it again on purpose because I can control the size of the marshmallows this way. I might try making some squares with really big marshmallow bits in them just for fun.
However, if you are really stuck and cannot get your hands on mini colored marshmallows then normal mini marshmallows are a really good replacement.
Another option is to make your own marshmallows and cut them to the size you want. This is a bit more involved but it is very doable and would allow you to be in control of the type of dye that is in the marshmallow. I have done this in the past and used a bit of blueberry or strawberry juice as a dye.

Ingredients
- Peanut Butter – use any kind of peanut butter. I normally like using all natural peanut butter but I do find that the “unhealthy kind” tends to work a bit better for keeping the texture of these bars nice.
- Butterscotch Chips
- Butter- make sure it is unsalted.
- Marshmallows– ideally the rainbow/colored ones.
And that’s it folks! Just 4 simple ingredients.
Peanut Butter Marshmallow Bars Recipe

Peanut Butter Marshmallow Bars (Confetti Bars)
Equipment
- 1 Medium Saucepan
- 1 8×8 Baking Pan
- Aluminum Foil
Ingredients
- ¼ cup unsalted butter
- 1 cup Peanut Butter Natural or Regular
- 1 bag butterscotch chips about 300g
- 4-5 cups rainbow marshmallows
Instructions
- Line a 8×8 baking pan with aluminum foil and spray with oil.
- Mix together in a saucepan on low heat the butterscotch chips, butter and peanut butter. Stir continuously.

- Allow this to cool to room temperature.
- Fold in the marshmallows. Mix really well.

- Pour the mixture into the 8×8 baking pan and smooth our the top with a spatula.

- Place in the fridge for a minimum of 2 hours for the bars to set.
- Once chilled, remove from the pan and cut into about 16 pieces.

How To Serve Peanut Butter Marshmallow Bars
These are so simple to serve which is another reason I love them so much. They are already pretty looking with their different colors so you don’t need to do anything extra with them.
Typically, I wait for them to fully cool and set and then I cut them up into small squares and put them out on a serving tray for people to grab them as they like.
These are great for kids birthday parties or to simply add a little color to a dessert platter for any occasion.
