How to Long Ferment Whole Wheat Sourdough Banana Bread

Long fermentation allows the yeast and bacteria in the sourdough starter to better break down the flour in your recipe. If the flour is broken down, you will have better digestibility, better texture and better taste in your final product.

For this recipe, I would recommend making the dough and placing it in the greased or lined bread pan and then covering it and placing it in the fridge for 12-24 hours. When you are ready to bake it, take it out of the fridge about 30 minutes before you want to start baking so it can become room temperature before going into the oven. Then you simply continue following the recipes instructions for baking.

Why I Love This Recipe

I love this recipe for 3 main reasons:

  1. It is an easy recipe to make because it is quick. You can pretty much just throw all your ingredients together with out much thought, then bake and you have wonderful fresh banana bread.
  2. It is a nice bread to have on hand for after school snacks, coffee visits, or a road trip. Once it is baked, you just slice and eat as you need with very little fuss.
  3. It is versatile! I always add chocolate chips because that is what my son likes but you can add nuts, raisins, chocolate chunks, etc. This makes it a very customizable recipe.

Unsalted Butter

If you decide to use salted butter, just omit the salt from the recipe.

Brown Sugar

Bananas

Must be ripe! Or else the texture wont be correct and the muffins wont be sweet enough.

Eggs

Large eggs work best

Sourdough Discard

Fed or Unfed starter will work. I usually use unfed.

Vanilla

Whole Wheat Flour

You can use All-Purpose flour for this recipe but we prefer the hearty texture and nutty flavor of whole wheat flour for this recipe.

Baking Soda and Baking Powder

Salt

Cinnamon

This is Optional. You can also add chocolate chips, nuts or raisins if you want to in this recipe for different flavors.

Equipment

  • 1 Stand Mixer
  • 1 Bread Pan

Ingredients
  

Dry Ingredients

  • 2 cups Whole Wheat Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Cinnamon optional

Wet Ingredients

  • ½ cup Melted and Cooled Butter
  • 1 cup Brown Sugar
  • 3 ripe Bananas
  • 2 Large Eggs
  • ½ cup Sourdough Starter
  • 1 tsp Vanilla
  • 1 cup Chocolate chips, Nuts, Raisin or Whatever! Optional

Instructions
 

  • Preheat your oven to 350℉ and grease (or line with parchment paper) a 9x 5 loaf pan.
  • In a bowl combine all the dry ingredients together (flour, baking soda, baking powder, salt, and cinnamon).
  • In your stand mixer mix the wet ingredients together (butter, eggs, and brown sugar first and then add the sourdough starter, bananas, and vanilla). Mix well.
  • Add your additions (chocolate, nuts etc…) if you want. This is optional!

  • Fold in the dry ingredients into the wet ingredients. Do not over mix or your bread will be too dense. Pour into your bread pan.
    * If you are doing a long fermentation process, you would cover the dough now and place it in the fridge for 12-24 hours.

  • Place in the oven and bake for 50-60 minutes. Allow to cool completely before slicing.

Notes

Equipment:
This bread will stay fresh in an air tight container on the counter for 2 days. Then move it to the fridge for another 5 days.
This bread can be frozen for up to 4 months.

How to Avoid Underbaked Banana Bread

Perfectly baked banana bread.

It can be hard to make a banana bread that is baked all the way through but the main way to avoid a sunken middle section is to test with a toothpick. Just as you would with muffins, test your bread by poking the center with a toothpick. If it comes out clean, it is baked through. If it is still wet inside but becoming brown on the outside, you can cover it with tin foil for the remainder of the time you keep it in the oven baking.

Can I Turn This Recipe Into Muffins?

Yes! Simply follow the recipe instructions but instead of putting them in a bread pan, put them in a lined muffin tin. Bake at 350 degrees Fahrenheit for 22 minutes.
