Protein Sourdough Brownies

These protein sourdough brownies are wholesome and easy to make. This recipe is one of my favorites because it is a one bowl recipe that is really easy and fast to throw together. I also love that these are the perfect way to use up sourdough discard while utilizing protein rich cream cheese. The taste is wonderfully rich, not overly sweet and packed with extra protein to keep you and your family feeling full for longer.

Why You’ll Love This Recipe

These aren’t your standard brownies! These are packed with gut nourishing sourdough discard as well as extra protein. I like to refer to these as “super brownies” in our house.

Anyone who bakes sourdough recipes knows that you are always on the hunt for recipes that can help you use up some of your sourdough discard. This one is a really good use of sourdough discard because the tangy flavor really makes these brownies unique.

This recipe doesn’t use butter. Instead I add cream cheese to it. This makes the brownies so creamy and moist on the inside. The added benefit to using cream cheese is the extra protein you get from it. According to Food Struc, cream cheese is packed with protein, phosphorus, calcium, zinc, and B complex vitamins. Much more than what is found in butter.

The lazy people out there (me included) will love this recipe because you can throw it all in one bowl, mix and then bake. It is a no fuss recipe that is also a crowd pleaser.

These protein sourdough brownies are great as a cozy dessert, an after-school snack, or a protein-boosting lunchbox treat.

Notes About The Ingredients

  • Cream Cheese– be sure to use this at room temperature. Otherwise the ingredients wont mix well. Also, I prefer full fat cream cheese for the best results.
  • Semi-Sweet Chocolate Chips– feel free to use chocolate chunks instead. Just make sure they are dark chocolate or semi0sweet. Otherwise your brownies will be too sweet.
  • Vanilla
  • Flour– all purpose flour is best.
  • Sugar
  • Cocoa powder
  • Salt– try to not use course salt for this recipe.
  • Eggs– these are also best at room temperature if possible.
  • Sourdough Discard– you will notice in the photo of my discard that it looks like it is a whole-wheat sourdough starter. That is because I alternate what flour I am adding to it. It just depends what I am baking that week. The use of any sourdough starter will work fine in this recipe.

Some Fun Ways To Make Protein Sourdough Brownies Even Better!

  • Sprinkle extra chocolate chips on top once it comes out the oven. This gives the brownies a nice look as they melt slightly on top.
  • If you run out of cream cheese you can substitute it for butter or a thick Greek yogurt. I would do a 1;1 substitution.
  • Add nuts for an additional depth of flavor. Walnuts or Pecans would be best.
  • These turn out really great if you use a 1:1 gluten-free flour. Brownies are pretty forgiving and often turn out even better when you make them gluten-free. Just make sure your starter is also gluten-free.
  • Do a white chocolate drizzle on top once they have cooled.
  • Add fun colored M&M’s for a seasonal twist for Easter, Christmas or Valentine’s Day.

Protein Sourdough Brownies

If you’ve been looking for a brownie that’s fudgy, tangy, nourishing, and incredibly easy to make, these Sourdough Brownies with Protein‑Boosting Cream Cheese are about to become your new favorite. They’re the perfect way to use up sourdough discard while sneaking in a little extra protein for growing kids (and tired moms).

Ingredients
  

  • 8 TBSP Cream Cheese
  • 1 cup Semi-sweet Chocolate Chips
  • 2 tsp vanilla
  • ¾ cup flour
  • cup sugar
  • ½ cup cocoa powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup sourdough discard

Equipment

  • 1 Stand Mixer optional
  • 1 9×9 baking dish
  • 1 Parchment paper optional

Method
 

  1. Preheat the oven to 350℉ and line a 9×9 baking dish with parchment paper.
  2. Add eggs, sugar, cream cheese, vanilla and sourdough discard together. Mix until well blended.
  3. Add flour, cocoa powder, salt, and chocolate chips to the wet ingredients. Mix until well incorporated.
  4. Pour mixture into the 9×9 baking pan. Spread out evenly over the pan.
  5. Bake at 350℉ for 40 minutes or until a toothpick comes out clean when you poke the center of the brownies.
  6. Allow to cool slightly and then cut into squares.

Notes

These are best if eaten within the first 5 days.
These can be frozen for up to 4 months after baking and letting them cool.
Always store these in an airtight container. I like to keep mine in the fridge for better freshness.

Serving Suggestions

These are really yummy on their own with a simple glass of milk.

I also really enjoy this straight our of the oven with either whipped cream or a scoop of vanilla ice cream.

For lunchbox prep, you can let them cool and then cut them up into squares. Simply add to a bento box or wrap the square up on it own.
